About the Recipe
These ice cream cookie sandwiches are pure summer fun and couldn’t be simpler to make. Our jumbo candy chip or chocolate chip cookies sandwiched with creamy vanilla ice cream, then get rolled in mini chocolate chips for a little extra crunch — a playful, crowd-pleasing treat that’s meant to be shared (or not).

Ingredients
6 Leaven Heaven Candy Chip Jumbo Cookies or Chocolate Chip Cookies
1½–2 quarts vanilla ice cream, slightly softened
1 cup mini chocolate chips, sprinkles, or crumpled candy bars, etc. have fun with it!
Preparation
Line a baking sheet with parchment paper.
Place the mini chocolate chips, sprinkles, or any other sweet treat, in a shallow bowl and set aside.
Working one at a time, scoop a generous portion of vanilla ice cream onto the flat side of a jumbo cookie. Top with a second cookie and gently press until the ice cream spreads evenly to the edges.
Roll the exposed ice cream edge in mini chocolate chips, pressing lightly so they adhere all the way around.
Place finished sandwiches on the prepared baking sheet and freeze for at least 30 minutes, or until firm. Serve immediately or wrap individually and keep frozen until ready to enjoy.

Jumbo cookies make these extra indulgent — one sandwich easily serves two.
Let ice cream soften slightly before assembling for clean edges.
